Cabbage Feta Tacos

Tortillas10 smalltaco size
Feta cheese1/4 cup
Salsa1 cupoptional
For filling:
Cabbage1 smallshredded
Red onion2 mediumjulienne
Red Pepper2 mediumjulienne
Cayenne pepperto taste
Saltto taste
Red chili powderto taste
Cumin powderto taste
Oreganoto taste
For beans:
Dry beans1 cupsoak 
Tomato1 mediumchopped
Cumin powderto taste
Saltto taste
Red chili powderto taste
Oreganoto taste

  1. Pressure cook beans for 2 whistles with salt
  2. In the same pan, add tomato and spices, simmer till cooked through
  3. Fry onion and red pepper with all spices until onion turns brown
  4. Add cabbage with salt (if needed) and turn off heat when cabbage is cooked but still crunchy
  5. Spread salsa on tortilla, fill with cabbage mix and beans
  6. Top with feta cheese and serve immediately
