Green Leaf Pappu

Serves: 4 

Toor Dal1/2 cupcooked for 3 whistles
Spinach1 bunch/1 canchopped
Onion1 medium/200gchopped
Chayote/opo squash1/400gpeeled & chopped
Garlic2-3 clovessliced
Oil2 tbsp
Chili powderto taste
Sambar powderto taste
Garlic powderto taste
Lemon/lime juiceto taste

  1. Fry onion and garlic in oil with a little salt
  2. Meanwhile microwave chopped squash with salt
  3. Add spinach and squash after the onions are done 
  4. After the spinach wilts, add dal and water and spice powders and simmer for 5 min
  5. Adjust salt, water and add lemon juice after turning off the heat
