Peanut Butter Soup

Serves: 4 
Calories: 320/serving 
Carrot3 largechopped fine
Broccoli1 largechopped fine
Peanut butter1/4 cup
Sambal olek2-3 tbsp
Stock2 cups
Chickpeas2 cupscooked
Diced tomatoes28 oz canpetite
Onion1 largechopped
Sugarto taste
Pepperto taste
Green onionchopped

  1. Fry onion & carrot with little salt & pepper
  2. Add tomatoes and cook for 5 minutes, then add stock
  3. Add peanut butter, sambal olek, chickpeas and sugar
  4. Cook for 10-15 minutes
  5. Add broccoli and turn off heat when cooked through
