| Carrot | 3 large | chopped fine |
| Broccoli | 1 large | chopped fine |
| Peanut butter | 1/4 cup | |
| Sambal olek | 2-3 tbsp | |
| Stock | 2 cups | |
| Chickpeas | 2 cups | cooked |
| Diced tomatoes | 28 oz can | petite |
| Onion | 1 large | chopped |
| Sugar | to taste | |
| Pepper | to taste | |
| Green onion | chopped |
Method:
- Fry onion & carrot with little salt & pepper
- Add tomatoes and cook for 5 minutes, then add stock
- Add peanut butter, sambal olek, chickpeas and sugar
- Cook for 10-15 minutes
- Add broccoli and turn off heat when cooked through
