Greek Spaghetti Squash Salad

Greek dressing
Spaghetti squash1 medium
Cherry tomatoes25-20sliced
Red onion1 mediumchopped fine
Cucumber1 largediced
Red pepper2 mediumdiced

  1. Slice squash in half lengthwise and remove seeds
  2. Sprinkle salt and pepper on the insides and bake for about 50 minutes at 400F
  3. Scoop out spaghetti strands and toss with other salad ingredients
