Spaghetti Squash Roast Bowl

Serves: 2 
Spaghetti squash1 largecut in half, remove seeds
Spinach1 bunchroughly chopped
Tomato1 largechopped
Shallots2 largechopped
Oreganoto taste
Pepperto taste
Feta cheeseto taste
Basilfew leaveschopped
Smoked paprikato taste
Olive oilto taste
Pine nutsfew
  • Sprinkle salt and cooking spray on the spaghetti squash and roast for 15-20 minutes at 400° F
  • In the meantime, mix all the other ingredients together 
  • Take out the spaghetti squash, fill with the mixture and top with more nuts and cheese
  • Roast for 30 to 40 minutes (depending on the size of the squash) until the squash is completely cooked
  • Eat directly or scoop out with a fork and serve
