| Ingredients | Qty | Prep |
| Spaghetti squash | 1 large | cut in half, remove seeds |
| Spinach | 1 bunch | roughly chopped |
| Tomato | 1 large | chopped |
| Shallots | 2 large | chopped |
| Oregano | to taste | |
| Pepper | to taste | |
| Feta cheese | to taste | |
| Basil | few leaves | chopped |
| Smoked paprika | to taste | |
| Olive oil | to taste | |
| Pine nuts | few |
Method:
- Sprinkle salt and cooking spray on the spaghetti squash and roast for 15-20 minutes at 400° F
- In the meantime, mix all the other ingredients together
- Take out the spaghetti squash, fill with the mixture and top with more nuts and cheese
- Roast for 30 to 40 minutes (depending on the size of the squash) until the squash is completely cooked
- Eat directly or scoop out with a fork and serve
