Tomato | 6 medium | cut in half |
Onion | 1 medium | roughly chopped |
Bell pepper | 1 large | chopped |
Serrano pepper | 1 large | chopped |
Garlic | 2 cloves | cut in half |
Salt | to taste | |
Oregano | to taste | dried |
Cilantro | 3-4 tbsp | chopped fine |
Lemon juice | 2-3 tsp | to taste |
Pepper | to taste |
Method:
- Arrange all the vegetables, serrano pepper and garlic on oven tray
- Spray with cooking oil, season with salt, pepper & oregano
- Broil for 10-15 minutes until slightly charred
- Blend with cilantro, lemon juice and adjust seasoning to taste
- Serve with chips, tacos or burritos
