Roasted Garden Salsa

Tomato6 mediumcut in half
Onion1 mediumroughly chopped
Bell pepper1 largechopped
Serrano pepper1 largechopped
Garlic2 clovescut in half
Saltto taste
Oreganoto tastedried
Cilantro3-4 tbspchopped fine
Lemon juice2-3 tspto taste
Pepperto taste

  1. Arrange all the vegetables, serrano pepper and garlic on oven tray
  2. Spray with cooking oil, season with salt, pepper & oregano
  3. Broil for 10-15 minutes until slightly charred
  4. Blend with cilantro, lemon juice and adjust seasoning to taste
  5. Serve with chips, tacos or burritos
