| Red potatoes | 2 lbs | 4-5 medium |
| Celery | 3 ribs | chopped |
| Green onion | 1 bunch | chopped |
| Parsley | 1/4 cup | chopped |
| Mayo | 3/4 - 1 cup | |
| Mustard | 1 tbsp | |
| Salt | to taste | |
| Pepper | to taste | |
| Oil | 1 - 2 tsp | |
| Vinegar | 1 - 2 tsp |
Method:
- Chop potatoes into small pieces and start cooking in cold water with 1 tsp salt
- Cook potatoes on medium heat without cover for 10 - 15 minutes until completely done
- Drain and keep aside
- Make vinaigrette with oil, vinegar, salt and pepper
- Toss potatoes while still hot in a mixing bowl
- Add the other ingredients, adjust seasoning and refrigerate for an hour at least
