| Red peppers | 2 lbs | 4-6 large |
| Garlic | 3 cloves | |
| Sunflower seeds | 2 tbsp | toasted |
| Walnuts | 1/4 cup | toasted |
| Asiago cheese | 1/2 cup grated | sub parmigiano |
| Parsley | 1/2 cup | chopped |
| Paprika | 1 tsp | |
| Cayenne pepper | 1/4 tsp | |
| Lemon juice | 2 tsp | |
| Salt | to taste | |
| Olive oil | 1/2 - 2/3 cups |
Method:
- Roast red pepper in broiler until charred, about 15 minutes
- Place in closed bowl for 15 minutes and then peel the skin
- Blend with all other ingredients, adjust oil, seasoning and salt to taste
