Red Pepper Pesto

Serves: 6 
Red peppers2 lbs4-6 large
Garlic3 cloves
Sunflower seeds2 tbsptoasted
Walnuts1/4 cuptoasted
Asiago cheese1/2 cup gratedsub parmigiano
Parsley1/2 cupchopped
Paprika1 tsp
Cayenne pepper1/4 tsp
Lemon juice2 tsp
Saltto taste
Olive oil1/2 - 2/3 cups
  • Roast red pepper in broiler until charred, about 15 minutes
  • Place in closed bowl for 15 minutes and then peel the skin
  • Blend with all other ingredients, adjust oil, seasoning and salt to taste
