Baked Pasta

Serves: 6 - 8  
Rotini1 lbcooked
Vegan sausages1 pkgchipotle/italian
Crushed tomatoes(1) 28 oz can
Onion1 largechopped
Zuchini1 mediumchopped
Peppers2 mediumany color
Mushroom16 ozchopped
Red chili flakesto taste
Saltto taste
Cayenne pepperto taste
Basil/Oreganoto taste
Mozzarella shredsto taste
  • Fry onion, peppers, mushrooms and zucchini with red pepper flakes, salt and cayenne pepper
  • Add crumbled sausages and cook until vegetables are done
  • Add tomatoes and adjust seasoning to taste
  • Mix with pasta and transfer to baking dish
  • Layer with cheese, then more pasta and top with cheese
  • Bake at 350F for 10-15 minutes until cheese melts
Farfalle can be used instead of rotini
