| Rotini | 1 lb | cooked |
| Vegan sausages | 1 pkg | chipotle/Italian |
| Crushed tomatoes | (1) 28 oz can | |
| Onion | 1 large | chopped |
| Zucchini | 1 medium | chopped |
| Peppers | 2 medium | any color |
| Garlic | 4 - 5 medium | minced |
| Red chili flakes | to taste | |
| Salt | to taste | |
| Cayenne pepper | to taste | |
| Basil/Oregano | to taste | |
| Mozzarella shreds | to taste |
Method:
- Fry onion and garlic for few minutes with chili flakes and salt
- Add tomatoes and adjust seasoning to taste
- Add crumbled sausages and veggies and cook for 5 minutes
- Mix with pasta and top with shredded cheese
- Bake at 350F for 10-15 minutes until cheese melts and broil for 2 minutes until golden
Notes:
Farfalle can be used instead of rotini
