Baked Pasta

Serves: 6 - 8  
Rotini1 lbcooked
Vegan sausages1 pkgchipotle/Italian
Crushed tomatoes(1) 28 oz can
Onion1 largechopped
Zucchini1 mediumchopped
Peppers2 mediumany color
Garlic        4 - 5 mediumminced
Red chili flakesto taste
Saltto taste
Cayenne pepperto taste
Basil/Oreganoto taste
Mozzarella shredsto taste
  • Fry onion and garlic for few minutes with chili flakes and salt
  • Add tomatoes and adjust seasoning to taste
  • Add crumbled sausages and veggies and cook for 5 minutes
  • Mix with pasta and top with shredded cheese
  • Bake at 350F for 10-15 minutes until cheese melts and broil for 2 minutes until golden
Farfalle can be used instead of rotini
