Whole tomato | (2) 28 oz cans | |
Onion | 1 medium | julienne |
Garlic | 2 small | minced |
Oregano | 1 tsp | |
Olive oil | 1-2 tbsp | |
Red pepper flakes | to taste | |
Parsley | to taste | garnish |
Salt | to taste | |
Pepper | to taste | |
Water | as needed | |
White bread | 2 slices | tear to pieces |
Method:
- Fry onions, oregano, red pepper flakes and garlic in 1/2 tbsp for 5 minutes until soft
- Add bread pieces, whole tomatoes and juice
- Cook for 5-10 minutes
- Blend thoroughly while adding remaining olive oil
- Cook for another 15 minutes
- Garnish with croutons and parsley
