| Gouda cheese | 1/2 cup | shredded/grated |

Method:
- Toss mushrooms and onion with salt, pepper and olive oil
- Roast for 20 minutes at 400F
- Layer bread with cheese, mushrooms and then more cheese
- Toast until cheese melts
