Kung Pao Cauliflower

Serves: 3 
For Cauliflower:
Cauliflower1 medium chopped
Corn starch5 tbsp
Breadcrumbs6 tbsp
Water5 tbsp
Soy sauce2 tsp
Cayenne pepper1/2 tsp
Oil1 tsp
For Sauce:
Oil2 tsp
Red chili flakes2 tsp
Peanuts6 tbspchopped
Garlic7 - 8 clovesminced
Ginger2 inchminced
Green onionto tastechopped
Soy sauce5 tbsp
Vinegar2 - 3 tbsp
Sugar1 tbsp
Water1 cup water
Corn starch2 tsp
  • Mix all cauliflower ingredients and spread on parchment sheet
  • Bake for 20 minutes (or more) at 425F
  • Fry red chili flakes, peanuts, ginger and garlic for few minutes
  • Add green onion and green peppers (if you want)
  • Add rest of the ingredients, stirring to make sure corn starch doesn't form lumps
  • Serve with fried rice, roti or as an appetizer
