Mushroom Solyanka

Onion4 largejulienne
Mushrooms1 lbchopped
Potatoes2 mediumquartered and sliced
Pickles3 largesliced
Olives6 tbspchopped
Tomato sauce5 tbsp
Saltto taste
Garlic4 clovesminced
Bay leaves4 medium
Pepper1/2 tsp
Paprika2 tsp
Water6 cupshot

  1. Fry onions for few minutes in little oil
  2. Add garlic, mushrooms, pepper, salt, paprika and bay leaves, cook for 5 minutes
  3. Add water and boil for 5 minutes
  4. Add potatoes and cook for 5 minutes
  5. Add pickles, olives, tomato sauce and adjust salt
  6. Cook until potatoes are soft and garnish with parsley or green onion
