Spicy Mac N Cheese

Macaroni1 lbcooked
Oil1 tsp
Onion1 largechopped
Garlic5 clovesminced
Red pepper2 largechopped
Mexican green chilis7 oz can
Jalapeno4 mediumchopped
Corn1.5 cups
Half and half2 cups/ 1 box
Milk1/4 - 1/2 cupsif needed
Cheddar3 cups (8 oz)shredded
Colby Jack + Mozzarella2 cups (4 oz each)shredded
Butter4 tbsp
Flour1/4 cup
Saltto taste
Pepperto taste
Cayenne pepperto taste
Mustard1.5 tsp
Breadcrumbs1/2 cup


  1. Fry onion, bell peppers, jalapeno, corn and green chilis in oil
  2. Meanwhile melt butter in another dish, add flour and keep mixing to make smooth roux
  3. Add 1 cup half and half to roux and mix well until it thickens to a paste
  4. Add remaining half and half to vegetables and reduce heat
  5. Add salt, pepper, cayenne and mustard to vegetables, adjust to taste
  6. Add macaroni, roux, milk (if needed) and cheddar cheese 
  7. Mix until well combined
  8. Transfer to baking dish, top with mozarella and Colby Jack cheese
  9. Roast breadcrumbs with chopped parsley for a few minutes
  10. Sprinkle breadcrumbs mixture and bake at 350 F for 20-30 minutes
