Spicy Mac N Cheese

Serves: 6 
Macaroni1 lbcooked
Oil1 tsp
Onion1 largechopped
Garlic5 clovesminced
Red pepper2 largechopped
Mexican green chilis7 oz can
Jalapeno4 mediumchopped
Corn1.5 cups
Half and half2 cups/ 1 box
Milk1/4 - 1/2 cupsif needed
Cheddar3 cups (8 oz)shredded
Colby Jack + Mozzarella2 cups (4 oz each)shredded
Butter4 tbsp
Flour1/4 cup
Saltto taste
Pepperto taste
Cayenne pepperto taste
Mustard1.5 tsp
Breadcrumbs1/2 cup


  • Fry onion, bell peppers, jalapeno, corn and green chilis in oil
  • Meanwhile melt butter in another dish, add flour and keep mixing to make smooth roux
  • Add 1 cup half and half to roux and mix well until it thickens to a paste
  • Add remaining half and half to vegetables and reduce heat
  • Add salt, pepper, cayenne and mustard to vegetables, adjust to taste
  • Add macaroni, roux, milk (if needed) and cheddar cheese 
  • Mix until well combined
  • Transfer to baking dish, top with mozarella and Colby Jack cheese
  • Roast breadcrumbs with chopped parsley for a few minutes
  • Sprinkle breadcrumbs mixture and bake at 350 F for 20-30 minutes
