Spicy Mac N Cheese

Macaroni1 lbcooked
Oil1 tsp
Onion1 largechopped
Garlic5 clovesminced
Red pepper2 largechopped
Green chilis7 oz can
Jalapeno2 mediumchopped
Corn1.5 cups
Cream2 cups/ 1 box
Milk1/4 - 1/2 cupsif needed
Cheddar2 cupsshredded
Mozarella1 cupshredded
Butter4 tbsp
Flour1/4 cup
Saltto taste
Pepperto taste
Cayenne pepperto taste
Mustard1.5 tsp
Breadcrumbs1/2 cup

  1. Fry onion, bell peppers, jalapeno, corn and green chilis in oil
  2. Meanwhile melt butter in another dish, add flour and keep mixing to make smooth roux
  3. Add 1 cup cream to roux and mix well
  4. Add remaining cream to vegetables and reduce heat
  5. Add salt, pepper, cayenne and mustard, adjust to taste
  6. Add macaroni, roux, milk (if needed) and cheddar cheese 
  7. Mix until well combined
  8. Transfer to baking dish and top with mozarella cheese
  9. Bake at 350 F for 15 minutes, add breadcrumbs and parsley and bake until browned (another 15 minutes)
