Spinach Feta Muffins

Makes: 20 muffins

Flour2.5 cups
Baking powder2 tsp
Salt1 tsp
Spinach2 cups packed
Feta cheese3/4 cupcrumbled
Tomatoes3/4 cupchopped
Parmesan4 tbspshredded
Milk1.3 cups
Butter6.5 tbsp
Egg1 medium
Green chilisto tasteminced finely

  1. Finely chop spinach in food processor and mix with flour, salt, baking powder, tomatoes, green chilis and both cheeses until well combined
  2. Melt butter in microwave (don't boil, just melt on low heat) and mix with milk and egg
  3. Add the wet ingredients to dry and combine well
  4. Fill muffin liners with dough, sprinkle little reserved cheese on top and bake at 400F for little less than 20 minutes or until tops are golden brown
  5. Serve hot
