Makes: 1 Loaf
Method:
- Soften the butter and cream with sugar using a whisk/beater
- Add eggs and mix (1 at a time)
- Puree bananas in a blender and mix it in along with vanilla
- Combine dry ingredients (flour, baking soda, salt, cinnamon) in a separate bowl
- Mix in dry stuff into the wet stuff 1/2 cup at a time
- Stir in the chopped pecans with a spatula
- Grease a bread pan and pour the mixture (or use parchment paper)
- Bake at 350F for 40-50 min, rotate pan mid-way for a uniform bake
- Push a toothpick at the center and if it comes out clean, it's done
Note: Optionally top with more pecans midway through the baking after the top has firmed up a bit
