Banana Nut Cake

Makes: 1 Loaf

Butter1 cup/stickroom temp
Sugar1 cup
Molassesa dashoptional
Eggs2 large
Bananas1 cup / ~2 largeoverripe
Flour1 cup
Baking soda1 tsp
Cinnamon1 tsp
Vanilla extract1/2 tsp
Salt1/2 tsp
Pecans1/2 cupchopped

  • Soften the butter and cream with sugar using a whisk/beater
  • Add eggs and mix (1 at a time)
  • Puree bananas in a blender and mix it in along with vanilla
  • Combine dry ingredients (flour, baking soda, salt, cinnamon) in a separate bowl
  • Mix in dry stuff into the wet stuff 1/2 cup at a time
  • Stir in the chopped pecans with a spatula
  • Grease a bread pan and pour the mixture (or use parchment paper) 
  • Bake at 350F for 40-50 min, rotate pan mid-way for a uniform bake
  • Push a toothpick at the center and if it comes out clean, it's done
Note: Optionally top with more pecans midway through the baking after the top has firmed up a bit
