Banana Nut Bread


Makes: 2 Loaves 
Calories: 3000/loaf

Butter1 cup/2 sticksmicrowave on low (4) for 2-3 min
Sugar2 cups
Eggs4
Bananas2 cups (4 no.)mashed
Flour2 cups
Baking soda2 tsp
Cinnamon powder2 tsp
Vanilla extract1 tsp
Salt1 tsp
Pecans1 cupchopped

Method:
  1. Melt the butter and mix with sugar with a whisk/beater
  2. Add eggs and mix (2 at a time)
  3. Add mashed bananas, salt, baking soda, cinnamon and mix
  4. Sieve the flour and mix (1 cup at a time)
  5. Stir in the chopped pecans with a spatula
  6. Grease 2 bread pans and pour the mixture
  7. Bake at 350F for 40-50 min
  8. Push a toothpick at the center and if it comes out clean, it's done
Notes:
Optional: Add nuts on top at 30 min mark, otherwise they'll sink to the bottom
