Jamaican Rice and Beans

Serves: 4

Rice1.5 cups
Kidney beans3/4 cupcook for 3 whistles
Onion2 medium
Red peppers3 mediumall colors
Garlic4 - 5 cloves
Jalapeno2 large
Thyme1 tsp
Coconut milk14 oz can
Salt to taste
Pepperto taste
Cilantrofew stalksminced

  1. Blend half the beans with garlic and green chilis, keep aside
  2. Fry onion and peppers for few minutes
  3. Add beans, beans paste and 1 cup water, bring to boil
  4. Add coconut milk, thyme and adjust salt and pepper to taste
  5. Cook for 5 minutes until water is level with rice
  6. Close lid and cook on very low for 15 - 20 minutes until rice is done
  7. Garnish with cilantro and/or hot sauce according to preference
