Couscous Ramen

Couscous2 cupsTJ's Israeli
Onion1 largechopped
Garlic3 - 4 large clovesminced
Coriander seeds2 tsptoast and grind
Caraway seeds3/4 tsptoast and grind
Smoked paprika1.5 tsp
Cayenne pepper1 tsp
Tomato paste2 tbsp
Harissa paste2 tbsp
Chickpeas2 cans / 1.5 cups dry6 hr soak and pressure cook
Cilantro+Mintto taste
Spinach1 bunchchopped
Water7 - 8 cups

Method:
  1. Fry onion for few minutes, then add garlic, salt and all spice powders
  2. Add drained chickpeas, couscous, water, tomato and harissa paste
  3. Simmer with lid on medium flame until couscous is cooked and water is absorbed
  4. Add spinach, mint and cilantro and adjust seasonings to taste
  5. Serve with additional harissa paste or hot sauce to taste
