Jungle Curry

Serves: 4 
Noodles4 roundscooked
Green onion1 bunch
Red chili1 - 2 mediumchopped
Garlic3 clovesminced
Ginger1 inchminced
Mushrooms1/2 lbchopped
Red pepper1 largesliced
Broccoli1 mediumchopped
Cilantrofew stalkschopped
Coconut milk15 oz can
For Sauce:
Water150 mlhot
Almond butter3 tbsp
Soy sauce2 tbsp
Maple syrup1 tbsp
Curry powder2 tbsp
Lemon1 mediumhalf for sauce
  • Fry onions, ginger, garlic and red chili for few minutes
  • Add mushrooms and red pepper
  • Add coconut milk after 5 minutes, let cook for some time and add the sauce
  • Now add the broccoli and wait until all vegetables are cooked
  • Add noodles, spinach and garnish with cilantro
  • Turn off heat and let stand for few minutes before serving
