Nutty Sweet Potato Soup

Leeks2 mediumchopped
Garlic2 cloveschopped
Sweet potatoes2 mediumchopped
Peanut butter2 tbsp
Harissa paste1.5 tbsp
Tomatoes3 mediumchopped
Turmeric1 tsp
Cumin powder.75 tsp
Stock3.5 cups
Water1.5 cups
Red chili1 mediumchopped

  1. Fry leeks, garlic and red chili for few minutes
  2. Add peanut butter, tomatoes, harissa paste, turmeric, cumin powder, stock and water
  3. Cook for 5 minutes
  4. Add sweet potatoes and simmer on medium-low heat for 20 minutes until tender
  5. Blend well and stir in cilantro, turn off heat
  6. Add lemon juice for taste and serve hot
