| Zucchini | 2 lbs | diced |
| Onion | 1 large | chopped |
| Garlic | 2 cloves | minced |
| Bouillon paste | 3 tsp | |
| Curry powder | 1 tsp | |
| Water | 4 - 5 cups | as needed |
| Salt | to taste | |
| Pepper | to taste | |
| Cayenne pepper | to taste | |
| Lemon juice | to taste | |
| Croutons | garnish |

| Quinoa | 1/2 cup |

Method:

Fry onion, garlic and zuchini for few minutes with salt
- Add curry powder and stock
- Bring to boil, then reduce heat to simmer and cook for 15-20 minutes
- Blend thoroughly and add quinoa to pot
- Garnish with croutons and serve hot
