Method:
- Fry onion, garlic and zuchini for few minutes with salt
- Add curry powder, stock, rice and adjust pepper to taste
- Bring to boil, then reduce heat to simmer and cook for 30 minutes
- Toss sliced zuchini with salt, pepper and oil. Roast at 350F for 10 minutes on each side
- Blend thoroughly, adjust seasoning and garnish with roasted zuchini
- Put quinoa in bowls and ladle soup on top, serve hot
