Curried Zuchini Soup

Calories: 150/serving (not incl quinoa)
Zuchini2 lbsdiced
Onion1 largechopped
Garlic2 clovesminced
Stock6 cups
Curry powder2 tsp
Rice1/4 cup
Saltto taste
Pepperto taste
Cayenne pepperto taste
Lemon juiceto taste
Zuchini1 mediumsliced
Quinoa1/2 cupcooked

  1. Fry onion, garlic and zuchini for few minutes with salt
  2. Add curry powder, stock, rice and adjust pepper to taste
  3. Bring to boil, then reduce heat to simmer and cook for 30 minutes
  4. Toss sliced zuchini with salt, pepper and oil. Roast at 350F for 10 minutes on each side
  5. Blend thoroughly, adjust seasoning and garnish with roasted zuchini 
  6. Put quinoa in bowls and ladle soup on top, serve hot
