Roasted Red Pepper Soup

Red peppers4 largeroasted
Olive oil 1 tbsp
Onion1 largechopped
Carrot3 largediced
Celery3 - 4 stalksdiced
Garlic4 large clovesminced
Chopped tomatoes14 oz
Stock2 tsp
Rice1/4 cup
Salt & pepperto taste
Water6 cups

  1. Peel and chop the roasted peppers
  2. Fry onion, carrots, and celery with salt
  3. Add garlic and tomatoes, adjust salt to taste
  4. Add the peppers, stock, rice, and pepper
  5. bring to a boil and reduce heat, cook for 30 minutes until rice is done
  6. Blend to a smooth consistency and serve hot with croutons
