Tomato and Herb Pasta Salad

Capers3 tbsp
Olives2/3 cupchopped
Mintfew stalkschopped

Parsleybunchchopped

Mozzarella0.3 - 0.5 lbshredded
Lemon juiceto taste
Olive oil3/4 cup
Saltto taste
Pepperto taste
Chili flakesfew, to taste
Method:
  • Chop tomatoes into cubes (halved if using cherry tomatoes), add salt and leave to drain for 30 minutes
  • Toss tomatoes with herbs, pepper, olive oil, capers, olives, little salt, lemon juice, and green onion
  • Marinate for at least 1 hour (up to 3)
  • Toss with pasta, adjust salt and pepper; garnish with chili flakes and serve cold
