Tomato and Herb Pasta Salad

Pasta1 lbfusili, farfalle
Tomato1.5 lbscubed
Capers3 tbsp
Olives2/3 cupchopped
Mintfew stalkschopped
Green onionbunchchopped
Mozzarella0.3 - 0.5 lbshredded
Lemon juiceto taste
Olive oil3/4 cup
Saltto taste
Pepperto taste
Chili flakesfew, to taste

  1. Chop tomatoes into cubes (halved if using cherry tomatoes), add salt and leave to drain for 30 minutes
  2. Toss tomatoes with herbs, pepper, olive oil, capers, olives, little salt, lemon juice, and green onion
  3. Marinate for at least 1 hour (up to 3)
  4. Toss with pasta, adjust salt and pepper; garnish with chili flakes and serve cold
