Tuscan Tomato Bread Soup

Sourdough bread12 ozchopped
Whole tomatoes28 oz cancrushed by hand
Olive oil2 tbsp
Chili flakesa pinch
Garlic4 clovesminced
Onion1 largeminced
Basilto taste
Stock2 cups
Saltto taste
Pepperto taste
Olive oilfor garnish

  1. Fry onion, garlic, and red chili flakes in olive oil for 5 minutes until softened
  2. Add crushed tomatoes along with a pinch of basil and cook well
  3. Add the bread pieces and stock; bring to simmer
  4. Cook on low-medium heat until bread breaks down completely; add water if needed
  5. Adjust salt and pepper to taste and serve hot with a drizzle of olive oil on top
