Cauliflower Caprese Casserole

Serves: 4 - 6 
Cauliflower1 largeflorets
Onion1 largechopped
Cherry tomato1 pinthalved
Tofu/Sausage1 boxoptional
Tomato sauce15 oz
Tomato paste3 tbsp
Heavy cream1/2 cup
Parmesan cheese1/2 cup
Mozarella cheese8 oz
Smoked paprika1/2 tsp
Red chili flakesto taste
Basilto tastefresh or dried
Sugar1 tsp
Pepperto taste

  • In a 3qt pan, fry onion in oil until translucent 
  • Optionally add shredded tofu/sausage and fry till browned 
  • Add tomato paste and cook till it turns dark while deglazing as needed
  • Add tomato sauce, cream, Parmesan cheese, pepper, sugar, red chili flakes, basil, and smoked paprika and bring to boil
  • Meanwhile toss cauliflower florets with salt and microwave till half done
  • Add half the shredded mozzarella, steamed cauliflower, and half the chopped tomatoes
  • Adjust salt & spices to taste
  • Transfer into an oven dish (use the biggest baking dish) and top with remaining cheese and then tomatoes on top
  • Bake for 30 minutes at 350 F
  • Broil for 1 minute if you want golden crust
  • Let sit for 5-10 minutes before serving
  • Serve with ciabatta/baguette/garlic bread on the side
Serves 6 with tofu/sausage and serves 4 without.
