Cauliflower Caprese Casserole

Serves: 5 - 6 
Calories: 350-300/serving (not counting bread)
Cauliflower1 largechopped
Cherry tomato1 boxhalved
Tomato sauce2 cups
Tomato paste3 tbsp
Heavy cream1/2 cup
Parmesan cheese1/2 cup
Mozarella cheese1.5 cups
Smoked paprika1/2 tsp
Pepperto taste
Red chili flakesto taste
Basilto tastefresh or dried
Sugar1 tsp
Olive oil1 tsp
  • Roast cauliflower at 425 F for 30-35 minutes, with oil, salt, and pepper turning once
  • Heat tomato sauce and paste until warm
  • Add cream, Parmesan cheese, salt (very little), sugar, red chili flakes, basil, and smoked paprika
  • Add half mozzarella cheese, roasted cauliflower, and chopped tomatoes
  • Pour into oiled oven dish and top with remaining cheese and then tomatoes on top
  • Bake for 30 minutes at 350 F until cheese boils
  • Broil for 1 minute if you want golden crust
  • Let sit for 5-10 minutes before serving
  • Serve with ciabatta or baguette on the side
