Cauliflower Caprese Casserole

Serves: 5 - 6 
Calories: 350-300/serving (not counting bread)
Cauliflower1 largechopped
Cherry tomato1 boxhalved
Tomato sauce2 cups
Tomato paste3 tbsp
Heavy cream1/2 cup
Parmesan cheese1/2 cup
Mozarella cheese1.5 cups
Smoked paprika1/2 tsp
Pepperto taste
Red chili flakesto taste
Basilto tastefresh or dried
Sugar1 tsp
Olive oil1 tsp

  1. Roast cauliflower at 425 F for 30-35 minutes, with oil, salt, and pepper turning once
  2. Heat tomato sauce and paste until warm
  3. Add cream, Parmesan cheese, salt (very little), sugar, red chili flakes, basil, and smoked paprika
  4. Add half mozzarella cheese, roasted cauliflower, and chopped tomatoes
  5. Pour into oiled oven dish and top with remaining cheese and then tomatoes on top
  6. Bake for 30 minutes at 350 F until cheese boils
  7. Broil for 1 minute if you want golden crust
  8. Let sit for 5-10 minutes before serving
  9. Serve with ciabatta or baguette on the side
