Method:
- Fry red pepper and carrots until lightly charred, add ginger and garlic
- Add curry paste, curry powder and little salt, cook for 5 minutes
- Add soy sauce, water, and coconut milk, bring to boil
- Reduce heat, add quinoa and green lentils
- Cook for 20-25 minutes until done
- Adjust salt and red chili powder to taste
- Garnish with fresh cilantro, basil, and lemon juice
- Serve hot with naan on the side
