Coconut Quinoa Curry

Red pepper2 largechopped
Carrots3 mediumchopped
Ginger1 inch pieceminced

Green lentils1 cup
Quinoa1 cup
Red curry paste3 tbsp
Curry powder1 tbsp
Coconut milk14 oz can
Water4 cups
Soy sauce1 tbsp
Lemon juiceto taste
Cilantroto taste
Basilto taste
Saltto taste
Red chili powderto taste

  1. Fry red pepper and carrots until lightly charred, add ginger and garlic
  2. Add curry paste, curry powder and little salt, cook for 5 minutes
  3. Add soy sauce, water, and coconut milk, bring to boil
  4. Reduce heat, add quinoa and green lentils
  5. Cook for 20-25 minutes until done
  6. Adjust salt and red chili powder to taste
  7. Garnish with fresh cilantro, basil, and lemon juice
  8. Serve hot with naan on the side
