Serves: 6
Method:
- Reserve the pasta water from cooked spaghetti for later
- Combine tomatoes, onion, garlic, olive oil, red pepper flakes, and carrot in pan
- Simmer for 30 minutes on medium heat, along with reserved pasta water
- Blend thoroughly and add veggie balls
- Cook for 5 - 10 minutes
- Serve warm over spaghetti
- Garnish with fresh basil and shredded Parmesan
Notes:
Reserve some of the pasta water to add to the sauce. Gives it needed thickness. Add vodka to tomatoes for intense flavor.
