Spaghetti and Vegballs

Serves: 6 
Spaghetti1 pound
Veggie balls4 per personIkea
Whole tomatoes28oz can
Oregano1 tsp
Onion1 mediumminced
Garlic2 clovesminced
Olive oilas needed
Red chili flakes1 - 2 tsp
Carrots1 mediumshredded
  • Reserve the pasta water from cooked spaghetti for later
  • Combine tomatoes, onion, garlic, olive oil, red pepper flakes, and carrot in pan
  • Simmer for 30 minutes on medium heat, along with reserved pasta water
  • Blend thoroughly and add veggie balls
  • Cook for 5 - 10 minutes
  • Serve warm over spaghetti
  • Garnish with fresh basil and shredded Parmesan

Reserve some of the pasta water to add to the sauce. Gives it needed thickness. Add vodka to tomatoes for intense flavor.
