Couscous Feta Salad

Serves: 4 
Couscous1 cup
Water1 cup
Cucumber1 largechopped
Tomato3 - 4 mediumchopped
Green onion1 bunchchopped
Red pepper1 largechopped
Chickpeas1 can (15 oz)
Feta cheese1 blockTJ's
Parsleyto taste
Basilto taste
Oreganoto taste
Lemon zest2 tsp
Lemon juice4 tbsp
Red wine vinegar2 tbsp
Pepperto taste
Saltto taste
  • Cook couscous with 1 cup water and little salt. Let cool and fluff with fork
  • Combine rest of the ingredients from cucumber to feta cheese in a bowl
  • Mix parsley, basil, oregano, salt, pepper, lemon zest, lemon juice and vinegar in small bowl
  • Toss with salad and serve immediately
