| Couscous | 1 cup | |
| Water | 1 cup | |
| Cucumber | 1 large | chopped |
| Tomato | 3 - 4 medium | chopped |
| Green onion | 1 bunch | chopped |
| Red pepper | 1 large | chopped |
| Chickpeas | 1 can (15 oz) | |
| Olives | few | chopped |
| Feta cheese | 1 block | TJ's |
| Parsley | to taste | |
| Basil | to taste | |
| Oregano | to taste | |
| Lemon zest | 2 tsp | |
| Lemon juice | 4 tbsp | |
| Red wine vinegar | 2 tbsp | |
| Pepper | to taste | |
| Salt | to taste | |
Method:
- Cook couscous with 1 cup water and little salt. Let cool and fluff with fork
- Combine rest of the ingredients from cucumber to feta cheese in a bowl
- Mix parsley, basil, oregano, salt, pepper, lemon zest, lemon juice and vinegar in small bowl
- Toss with salad and serve immediately
