Cauliflower Feta Greek Salad

Kale | 1 bunch | salad mix |
Red onion | 1 large | chopped |
Cherry tomato | 1 box | sliced |
Olives | 2/3 cup | sliced |
Sunflower seeds | 2 - 3 tbsp | |
Topping: | | |
Cauliflower | 1/2 head | grated |
Lemon juice | 1 tbsp | adjust to taste |
Salt | 1/8 tsp | adjust to taste |
Olive oil | 1/2 tbsp | adjust to taste |
Dressing: | | |
Olive oil | 1/4 cup | |
Red wine vinegar | 3 tbsp | |
Basil | 1/2 tsp | |
Oregano | 1/2 tsp | |
Mustard | 1/2 tsp | |
Garlic | 1 clove | grated |
Salt | 1/2 tsp | |
Pepper | to taste | |
Method:
- Toss cauliflower with lemon juice, salt, and oil. Refrigerate for at least 10-15 minutes
- Blend dressing ingredients until emulsified and keep aside
- Add salad veggies to a bowl. Toss with dressing and cauliflower topping.
- Add protein of choice - roasted chickpea, tofu, tempeh etc.
