Cabbage Feta Greek Salad

Kale1 bunchsalad mix
Red onion1 largechopped
Cherry tomato1 boxsliced
Olives2/3 cupsliced
Sunflower seeds2 - 3 tbsp
Topping:
Cauliflower1/2 headgrated
Lemon juice1 tbspadjust to taste
Salt1/8 tspadjust to taste
Olive oil1/2 tbspadjust to taste
Dressing:
Olive oil1/4 cup
Red wine vinegar3 tbsp
Basil1/2 tsp
Oregano1/2 tsp
Mustard1/2 tsp
Garlic1 clovegrated
Salt1/2 tsp
Pepperto taste

Method:
  1. Toss cauliflower with lemon juice, salt, and oil. Refrigerate for at least 10-15 minutes
  2. Blend dressing ingredients until emulsified and keep aside
  3. Add salad veggies to a bowl. Toss with dressing and cauliflower topping.
  4. Add protein of choice - roasted chickpea, tofu, tempeh etc.
