Serves: 4
Method:
- Fry chorizo in oil until crisp but not burnt. Keep aside.
- Fry onion lightly, add beans, salt, pepper, and cumin powder
- Mash beans until desired consistency
- Spread cheese on tortilla, add beans, chorizo, and roasted veggies if using
- Top with cheese and fry both sides in a pan with little oil (like dosa) until crisp
- Serve with taco sauce and salsa verde
