Ginger Scallion Ramen

Serves: 4

Ramen4 packs (25 oz)fresh
Mirin tofu
Ginger5 inch pieceshredded
Garlic4 clovesshredded
Oil1/3 cup
Green onion1 big bunchchopped
Soy sauce2 tbsp
Vinegar1 tbsp
Black pepper1 tsp
Toasted sesame oil1 tsp
Sugar1/2 tsp
Saltto taste
Sesame seedsgarnishtoasted
Chili oilgarnish


Method:
  1. Toss ginger, garlic, and 1/2 green onion in a large bowl
  2. Heat oil to shimmer and pour over green onions. let sit for 5 minutes
  3. Add remaining green onion, vinegar, soy sauce, salt, pepper, sugar, and sesame oil
  4. Let sit for at least 15 minutes
  5. Cook ramen in boiling water (add salt to water)
  6. Toss with green onion mix. Garnish with sesame seeds and serve with chili oil
