Ginger Scallion Ramen

Serves: 4 
Ramen4 packs (25 oz)fresh
Mirin tofu
Ginger5 inch pieceshredded
Garlic4 clovesshredded
Oil1/3 cup
Green onion1 big bunchchopped
Soy sauce2 tbsp
Vinegar1 tbsp
Black pepper1 tsp
Toasted sesame oil1 tsp
Sugar1/2 tsp
Saltto taste
Sesame seedsgarnishtoasted
Chili oilgarnish
  • Toss ginger, garlic, and 1/2 green onion in a large bowl
  • Heat oil to shimmer and pour over green onions. let sit for 5 minutes
  • Add remaining green onion, vinegar, soy sauce, salt, pepper, sugar, and sesame oil
  • Let sit for at least 15 minutes
  • Cook ramen in boiling water (add salt to water)
  • Toss with green onion mix. Garnish with sesame seeds and serve with chili oil
