Basil Hummus | | |
Ikea veg balls | 20-25 | |
Red pepper | 1 large | julienne |
Cucumber | 1 large | julienne |
For Salsa: | | |
Spring onions | as needed | chopped |
Mint | 1 cup | chopped |
Tomato | 3+ large | chopped |
Lemon juice | to taste | |
Salt | to taste | |
Pepper | to taste | |
Method:
- Microwave veggie balls as needed. Break in half by hand.
- Spread hummus on tortilla and place 5 - 6 half-balls
- Add 1 - 2 slices of peppers and cucumbers
- Top with fresh salsa and roll into wraps
- Serve with chips and hummus on the side
