Gazpacho

Serves: 2 - 3

Cucumber1 large
Red pepper1 large
Heirloom tomoato2 lbslarge dice
Green onion1 bunch
Garlic1 smallgrated
Red wine vinegar1 tbsp + more
Olive oil3 tbsp
Salt1 tsp + more
Cherry tomatofewhalved
Breadfor serving

Method:
  1. Chop cucumber and red pepper, set half for garnish and put rest in large bowl
  2. Cut tomatoes in wedges and add to bowl
  3. Toss with garlic, green onion (white parts), vinegar, and salt. Let sit for 30 minutes
  4. Blend everything with olive oil until smooth
  5. Top with chopped cucumber, red pepper, green onion, cherry tomatoes and more olive oil
  6. Serve with hot bread on the side.
