Gazpacho

Serves: 2 - 3

Cucumber1 large
Red pepper1 large
Heirloom tomoato2 lbslarge dice
Green onion1 bunch
Garlic1 smallgrated
Red wine vinegar1 tbsp + more
Olive oil3 tbsp
Salt1 tsp + more
Cherry tomatofewhalved
Breadfor serving
Method:
  • Chop cucumber and red pepper, set half for garnish and put rest in large bowl
  • Cut tomatoes in wedges and add to bowl
  • Toss with garlic, green onion (white parts), vinegar, and salt. Let sit for 30 minutes
  • Blend everything with olive oil until smooth
  • Top with chopped cucumber, red pepper, green onion, cherry tomatoes and more olive oil
  • Serve with hot bread on the side.
