Serves: 2 - 3
Method:
- Chop cucumber and red pepper, set half for garnish and put rest in large bowl
- Cut tomatoes in wedges and add to bowl
- Toss with garlic, green onion (white parts), vinegar, and salt. Let sit for 30 minutes
- Blend everything with olive oil until smooth
- Top with chopped cucumber, red pepper, green onion, cherry tomatoes and more olive oil
- Serve with hot bread on the side.
