Method:
Preheat oven to 350 F. Grease and line parchment paper in loaf pan with overhang on sides Mix flour, soda, and salt Beat butter, brown sugar, and yogurt (or sour cream) with electric mixer on medium high for about 4 minutes until light and fluffy Add eggs one at a time and blend well Reduce speed to low, add flour mixture and mix until well combined, then add mashed bananas - Mix in chopped pecans and pour into pan
- Bake for 60 - 65 minutes until toothpick comes out clean
- Let cool for at least an hour on cooling rack before slicing
