Banana Bread

Makes: 1 loaf 
Flour1.5 cups
Baking soda1.25 tsp
Salt1/3 tsp
Brown sugar1 cupdark, packed
Thick yogurt1/3 cupsour cream
Unsalted butter1/2 stickroom temp
Eggs2 large
Bananas4 largeripe, mashed
Pecans1/2 cupchopped
  • Preheat oven to 350 F. Grease and line parchment paper in loaf pan with overhang on sides
  • Mix flour, soda, and salt
  • Beat butter, brown sugar, and yogurt (or sour cream) with electric mixer on medium high for about 4 minutes until light and fluffy
  •  Add eggs one at a time and blend well
  • Reduce speed to low, add flour mixture and mix until well combined, then add mashed bananas
  • Mix in chopped pecans and pour into pan
  • Bake for 60 - 65 minutes until toothpick comes out clean
  • Let cool for at least an hour on cooling rack before slicing
