Fusili alla Vodka

Serves: 4 
Fusili1 lbcooked
Olive oil1/4 cup
Onion1 largediced
Garlic1 largegrated
Tomato paste1/2 cup
Vodka2 tbsp
Heavy cream1 cup
Chili flakes2 tsp
Saltto taste
Pepperto taste
Red chili powderto taste
Butter2 tbsp
Parmesan1 ozmore for garnish
Basil1/2 cupchopped
  • Start cooking pasta in boiling salted water
  • Saute onions and garlic in olive oil on medium heat for 5 - 6 minutes until softened
  • Add tomato paste and cook for 5 minutes until it turns brick red and starts to caramelize
  • Add vodka and cook for 2 - 3 minutes until liquid evaporates
  • Turn off heat, add cream, chili flakes, salt, and pepper to taste
  • Drain pasta, reserving at least 1 cup of pasta water
  • Add to sauce on low - medium heat, along with butter and pasta water
  • Toss until butter melts and forms a glossy sauce, mix cheese and basil 
  • Divide pasta into bowls and garnish with more cheese and basil
  • Serve with toasted bread and olive oil dip
