Method:
Start cooking pasta in boiling salted water - Saute onions and garlic in olive oil on medium heat for 5 - 6 minutes until softened
- Add tomato paste and cook for 5 minutes until it turns brick red and starts to caramelize
- Add vodka and cook for 2 - 3 minutes until liquid evaporates
- Turn off heat, add cream, chili flakes, salt, and pepper to taste
- Drain pasta, reserving at least 1 cup of pasta water
- Add to sauce on low - medium heat, along with butter and pasta water
- Toss until butter melts and forms a glossy sauce, mix cheese and basil
- Divide pasta into bowls and garnish with more cheese and basil
- Serve with toasted bread and olive oil dip
