Harissa Chickpea Toast

Makes: 10 open sandwiches 
Chickpeas1.5 cupscooked
Red onion1 largeminced
Garlic2 small cloves
Lemon zest1 tsp
Lemon juice1/4 cup
Celery4 stalkschopped
Celery leavesgarnish
Cilantro1/2 cupchopped finely
Pickled jalapenos2 tbspfinely diced
Olive oil1/4 cup
Saltto taste
Pepperto taste
Yogurt1 cup
Harissa paste4 tsp or more
Bread8 - 10 slicestoasted
  • Combine red onion, grated garlic, lemon zest, and lemon juice in a bowl
  • Mash chickpeas until a few are mashed but leave most beans whole
  • Add to onion mixture with celery, cilantro, pickled jalapenos, and olive oil
  • Toss and season with salt and pepper
  • Combine yogurt and harissa paste partially
  • Spoon yogurt and chickpea mixture onto toasted bread slices
  • Garnish with minced jalapenos, cilantro sprigs, celery leaves, and season with salt and pepper if needed
