Red Lentil Soup with Mint Yogurt

Serves: 6 - 8 
Red lentils2 cups
Broth6 tsp
Water6 cups
Onion2 largechopped
Celery4 ribschopped
Carrot2 largediced
Butter1/4 cup
Tomato paste1/4 cup
Cumin powder4 tsp
Cayenne pepper1 tsp
Garlic8 clovesgrated
Yogurt1 cup
Lemon juiceto taste
Saltcoarseto grind
  • Fry onion, tomato paste, and salt until paste caramelizes and turns brick red
  • Add garlic, cumin powder, and cayenne pepper cooking for few minutes
  • Add broth, bring to simmer and reduce heat
  • Add lentils, carrots, and celery and continue cooking fr 30-40 minutes until done
  • Grind mint leaves with salt into paste and add to yogurt with lemon juice
  • Blend soup partly until creamy and garnish with mint yogurt
Sub tomato paste with 3/4 cup or 1 cup tomato sauce
