Method:
Fry onion, tomato paste, and salt until paste caramelizes and turns brick red Add garlic, cumin powder, and cayenne pepper cooking for few minutes Add broth, bring to simmer and reduce heat Add lentils, carrots, and celery and continue cooking fr 30-40 minutes until done Grind mint leaves with salt into paste and add to yogurt with lemon juice - Blend soup partly until creamy and garnish with mint yogurt
Notes:
Sub tomato paste with 3/4 cup or 1 cup tomato sauce
