Khushka Rice - Potato Pulao

Cloves4 pieces
Cinnamon1-inch piece
Cardamom2 green
Mace1 thread
Bay leaffew small
Aniseed1 piece
Fennel seeds2 tsp
Cashews1/3 cup
Onion1 largesliced
Garlic4 clovesminced
Potato2 mediumchopped
Yogurt1/2 cup
Mint chutney1/4 - 1/3 cup
Rice2 cups
Water3 cupsas needed
Saltto taste
Gheefor frying
Oil2 tbspfor frying
  • Fry whole spices in ghee and oil until aromatic
  • Add onions, garlic, and cashews, cook well
  • Add potatoes and fry and cook for 5 - 10 minutes
  • Lower heat and add yogurt with mint chutney, stir well
  • Add water, rice, and cook until rice is finished
