Khushka Rice - Potato Pulao

Cinnamon | 1-inch piece | |
Cardamom | 2 green | |
Mace | 1 thread | |
Bay leaf | few small | |
Aniseed | 1 piece | |
Fennel seeds | 2 tsp | |
Cashews | 1/3 cup | |
Onion | 1 large | sliced |
Garlic | 4 cloves | minced |
Potato | 2 medium | chopped |
Yogurt | 1/2 cup | |
Mint chutney | 1/4 - 1/3 cup | |
Rice | 2 cups | |
Water | 3 cups | as needed |
Salt | to taste | |
Ghee | for frying | |
Oil | 2 tbsp | for frying |
Method:- Fry whole spices in ghee and oil until aromatic
- Add onions, garlic, and cashews, cook well
- Add potatoes and fry and cook for 5 - 10 minutes
- Lower heat and add yogurt with mint chutney, stir well
- Add water, rice, and cook until rice is finished
