Warm/Cold Couscous Salad

Serves: 2 - 4 

Couscous200guncooked, TJ's
Chickpeas1 can3/4 cup dry
Cherry tomatoes1 boxhalved
Salt1/2 tsp
Pepper1/4 tsp
Cucumber1 mediumsliced
Mint3 tbsp
Basil2 tbsp
Parsley2 tbspoptional
Almonds1/4 cuptoasted
Olive oil3 tbsp
Red wine vinegar3 tbsp
Lemon juice1 tbsp
Red chili powder1/4 tspwhisk well

  • Cook couscous according to package instructions and drain
  • Toss tomatoes with salt and pepper. Alternatively, cook tomatoes in little olive oil with salt and pepper for 5 minutes until soft
  • Toss all salad ingredients together and top with toasted almonds 
  • Serve with garlic bread or soup to make 4 servings
