Masala Puri

Dry
Cinnamon2-inch piece
Cloves4 pieces
Star anise1 piece
Mace4 strands
Nutmeg4 pinchesgrated
Coriander2 tbsp
Cumin1 tsp
Chutney dal2 tbspgrind to powder
Wet
Coconut1/2 cup
Green chili5 - 6 medium
Ginger1-inch piece
Garlic3 - 4 cloves
Cilantroto taste
Cooked peas1/2 cup
Wateras neededgrind to paste

Method:
  • Pressure cook soaked peas for 3 whistles with a little salt
  • Make the masala paste, first grind the dry ingredients to powder. Then add wet ingredients, add water, and grind to a smooth paste
  • Fry half the onion in little oil, then add red chili powder
  • Now add the masala paste and remaining peas
  • Season with salt, sugar, and 1 cup water. Simmer for 10 minutes.
  • Assemble masala puri in wide bowls in this order
    • First, crush some puris and layer at the bottom
    • Then add cooked masala gravy
    • Then top with chopped onion, tomato, and chaat masala (optional)
    • Add lemon juice, cilantro, and sev 
  • Serve immediately
