Method:
- Pressure cook soaked peas for 3 whistles with a little salt
- Make the masala paste, first grind the dry ingredients to powder. Then add wet ingredients, add water, and grind to a smooth paste
- Fry half the onion in little oil, then add red chili powder
- Now add the masala paste and remaining peas
- Season with salt, sugar, and 1 cup water. Simmer for 10 minutes.
- Assemble masala puri in wide bowls in this order
- First, crush some puris and layer at the bottom
- Then add cooked masala gravy
- Then top with chopped onion, tomato, and chaat masala (optional)
- Add lemon juice, cilantro, and sev
- Serve immediately
