Paneer Kathi Rolls

Makes: 4 rolls

Paneer250 gcubed
Onion1 largejulienne
Green pepper1 mediumjulienne
Tomato2 mediumjulienne, no seed
Lemon juiceto taste
Mustard oil2 tbsp
Red chili powder1 tsp
Garam masala1/2 tsp
Black salt1/4 tsp
Ginger garlic paste1 tsp
Yogurt1/3 cupthick
Liquid smoketo taste
Large tortillaas neededabout 4

Method:
  • Mix oil, curd, red chili powder, garam masala, black salt, ginger garlic paste, and liquid smoke in a bowl until smooth
  • Add paneer and let it marinate for a few minutes
  • Heat oil in a cast-iron pan and add the paneer cubes. Toss well and fry for a few minutes
  • Remove paneer, and add the tomato, pepper, and onion. Lightly fry on high heat, do not let veggies become soggy
  • Add the paneer back to pan and toss well 
  • Assemble rolls with paneer mixture, lemon juice, chat masala, cilantro, ketchup, pickled onions and red chili sauce
