Method:
- Set oven to 400F
- Pour olive oil into a large baking pan
- Add tomatoes, pepper, red chili flakes, shallots, salt, and crushed garlic cloves. Toss until well combined
- Place the drained feta cheese in the center and bake in the oven for 40 minutes
- 15 minutes before the tomatoes are done, start cooking pasta in a pot
- Cook the pasta and drain, reserve pasta water
- Combine the pasta with tomatoes and feta cheese with pasta water as needed
- Add the basil, thyme, or any other spices
Notes:
It's important to use authentic Greek feta made from sheep's milk. American feta made with goat or cow milk will be gritty or grainy. It will not emulsify well with the oil and tomato juices. Can use any spices you have such as basil, thyme, oregano, or herbs de Provence. Sub 1 medium sweet onion instead of 2 shallots.
