Hummus

Serves: 4 - 6

Tahini3/4 cup
Lemon juice6 tbsp
Garlic3 clovespeel and chop
Cumin powder1 tsp
Kosher saltto taste
Black pepperto taste
Ice water6 - 10 tbsp
Toppings:
Garlic5 clovessliced
Olive oil1/3 cup
Kosher saltas needed
Lemon peel2 - 3 pieces2 inches long
Red chili flakesto tastegarnish
Zatarto tastegarnish

Method:
  • Add all hummus ingredients to a Vitamix jar (64oz)
  • Blend until smooth and creamy, adding more water if needed
  • Heat the olive oil on medium and add garlic slices when warm
  • Fry garlic until it turns golden brown, then add the lemon slices
  • Swirl the oil around and turn off the heat after 1 minute
  • Make swirls in the hummus and top with the fried garlic oil
  • Garnish with red chili flakes or Zatar
