Mushroom and Cashew Bisque
Serves: 4
| Ingredients | Qty | Prep |
| Mushrooms | 1 lb | chopped |
| Dried mushrooms | 14g | |
| Cashews | 1 cup | roasted |
| Onion | 1/2 small | chopped |
| Garlic | 1 small | chopped |
| Bouillon paste | 2 tsp | |
| Water | 3 cups + 1 cup | |
| Pepper | as needed | to taste |
Method:
- Fry the mushrooms in a skillet until golden brown with the garlic and onion
- Combine all ingredients and blend to a smooth consistency
- After soup is ready, add 1 more cup of water and mix well
- Garnish with parsley or any herb of choice
