Shoyu Noodles

Noodles400gprefer udon
Butter2 tbsp
Shitake mushrooms5 - 6 driedsoak and slice
Mushrooms1/2 lbquartered
Baby bok choy2 smallchopped
Edamame100gfrozen
Sauce
Soy sauce2 tbsp
Hoisin sauce2 tbsp
Vegan fish sauce2 tbsp
Sambal Olek1 - 2 tbspto taste
Garlic powder1 tspwhisk well

Method:

  • Cook the noodles per package instructions and set aside
  • Fry the mushrooms in butter until browned and fragrant
  • Add half the sauce and baby bok choy (the white parts) and cook down for 2 minutes
  • Add some water if needed to scrape off the browned bits
  • Finally add the noodles, remaining sauce, edamame, and green part of bok choy, and mix well
  • Serve with green onion and white sesame seeds for garnish
