Method:
- Pressure cook sweet potatoes for 1 - 2 whistles until just cooked
- Allow to cool, peel and chop into cubes or rounds
- Toss the chickpeas with oil, salt, and spice powders in a bowl until thoroughly coated
- Spread chickpeas on a baking sheet (1 half pan or 2 quarter pans) and cook for 20 - 25 minutes at 425F until blistered in some spots
- Make raita with sweet onions, tomato, and/or cucumbers
- Assemble the chat in layers - papdi, sweet potato, roasted chickpeas, raita, cilantro sauce, pickled onions or jalapenos, and lemon juice
