Method:
- Pressure cook sweet potatoes for 1 - 2 whistles until just cooked
- Allow to cool, peel and chop into cubes or rounds
- Toss the chickpeas with oil and salt
- Layer chickpeas on the skillet and cook undisturbed for a few minutes. Mix with ladle and again let it cook for a few minutes, repeat until blistered. Add the spice powders and toss to coat.
- Make raita with sweet onions, tomato, and/or cucumbers
- Assemble the chat in layers - papdi, sweet potato, roasted chickpeas, raita, cilantro sauce, pickled onions or jalapenos, and lemon juice
