Makes: 2 - 4 sandwiches
Method:
- Mix all the ingredients for the cheese fillings in a bowl
- Cover and marinate in the fridge for 15 minutes or up to several hours
- Pile the marinated cheese evenly onto 1 bread slice; cover with the other slice.
- Fry with olive oil till both sides are crisp and well-browned, and the cheese filling has melted; about 3 minutes per side.
