| Noodle cakes | 4 | cooked |
| Broccoli | 2 small | chopped in florets |
| Bokchoy | 1 large | chopped |
| Red pepper | 2 large | julienne |
| Leeks | 1 large | chopped |
| Green onion | 3-4 stalks | chopped |
| Garlic | 2 cloves | minced |
| For Sauce: | ||
| Peanut butter | 1/2 cup | |
| Sriracha sauce | to taste | |
| Salt | to taste | |
| Soy sauce | 3 tbsp | |
| Honey | 2 tsp | |
| Oil | if needed |
Method:
- Combine the peanut butter, soy sauce, sriracha sauce & honey for the sauce
- Fry leeks and garlic in wok until browned
- Add the broccoli, bok choy, and peppers and toss to combine
- Push veggies to the side, add sauce and crispy tofu (if using) and cook for 5 minutes
- Adjust salt and sriracha sauce to taste
- Finally add cooked noodles and garnish with green onion
