Aloo Saagu

Serves: 4 
Potato1.5 lbscooked
Onion1 largejulienne
Gingersmall pieceminced
Green chilis2-3 mediumminced
Dhaniya powder2 tsp
Asafoetida1/2 tsp
Turmeric1/4 tsp
Corn starch1 tsp
Sugar1 Tbsp
Saltto taste
Oilas needed
Indian seasoningw/ dals

  1. Peel the boiled potatoes and set aside to cool
  2. Fry onions with turmeric and asafoetida in oil along with dal seasoning for a few minutes
  3. Add ginger, green chilies and dhaniya powder and cook for 30 sec
  4. Add 2 cups of water, salt and sugar
  5. Roughly crush the boiled potatoes with hand while dropping into the water
  6. Make cornstarch slurry with some water and add to the dish
  7. Bring to simmer and cook on low for 20 min
  8. Garnish with cilantro and serve with Rava Idli
