Tofu Banh Mi

Serves: 4

Baguette1 standard sizesliced
Tofu1 package, 12 ozextra firm
Pickled carrot
Ginger scallion oil
Cucumber1 large seedlesswide julienne
Mayo1 tbsp
For marinade:
Cilantro1/2 bunch
Garlic4 medium cloves
Coriander powder1 tsp
Saltto taste
Pepper2 tsp
Green chili1 medium
Sugar2-3 tsp
Soy sauce2 tsp
Lemongrass2 tsp
Oil2 tbspblend to paste

  1. Cut tofu into wide slabs, about 11 or 12
  2. Brush marinade on one side and broil for 10 minutes
  3. Flip over, brush marinade and broil again for 10 minutes
  4. Remove from oven and pour remaining marinade on top 
  5. Spread mayo on 1 side of bread and ginger scallion oil on other
  6. Place tofu, cucumber and pickled carrot and assemble sandwich
  7. Serve immediately
