Super firm tofu | 16 oz | |
Pickled carrot | ||
Chili oil | ||
Cucumber | 1 large | slices |
Mayo | 1 tbsp | |
Marinade: | ||
Cilantro | 1 bunch | |
Garlic | 4 cloves | |
Coriander powder | 1 tsp | |
Salt | to taste | |
Pepper | 2 tsp | |
Green chili | to taste | |
Sugar | 2 tsp | |
Soy sauce | 2 tsp | |
Lemongrass | 2 tsp | |
Oil | 2 tbsp | blend |
Method:
- Marinate tofu for about 30 minutes
- Fry tofu in a pan until cooked on both sides
- Spread mayo on 1 side of bread and ginger scallion oil on the other
- Assemble the sandwich with tofu, cucumber and pickled carrots
- Garnish with cilantro
Notes:
Super firm tofu does not need to be pressed.
