Tofu Banh Mi

Serves: 4 
Baguette1 standard sizesliced
Crispy tofu12 ozextra firm
Pickled carrot
Ginger scallion oil
Cucumber1 large seedlesswide julienne
Mayo1 tbsp
For marinade:
Cilantro1/2 bunch
Garlic4 medium cloves
Coriander powder1 tsp
Saltto taste
Pepper2 tsp
Green chili1 medium
Sugar2-3 tsp
Soy sauce2 tsp
Lemongrass2 tsp
Oil2 tbspblend to paste
  • Toss tofu with marinade in pan until cooked
  • Spread mayo on 1 side of bread and ginger scallion oil on other
  • Place tofu, cucumber and pickled carrot and assemble sandwich
  • Serve immediately
