Tofu Banh Mi

Serves: 4

Breadas neededsourdough
Super firm tofu16 oz
Pickled carrot
Chili oil
Cucumber1 large slices
Mayo1 tbsp
Marinade:
Cilantro1 bunch
Garlic4 cloves
Coriander powder1 tsp
Saltto taste
Pepper2 tsp
Green chilito taste
Sugar2 tsp
Soy sauce2 tsp
Lemongrass2 tsp
Oil2 tbspblend

Method:
  • Marinate tofu for about 30 minutes
  • Fry tofu in a pan until cooked on both sides
  • Spread mayo on 1 side of bread and ginger scallion oil on the other
  • Assemble the sandwich with tofu, cucumber and pickled carrots 
  • Garnish with cilantro
Notes:
Super firm tofu does not need to be pressed.
